We are guided by the seasons at Maddox Tavern, working closely with our butchers, fishmongers and greengrocers to create dishes that are all about provenance and flavour.
Our rare breed meat comes from Huntsham Court Farm, which has been in the Vaughan family for over 400 years. Richard and Rosamund Vaughan rear Longhorn cattle, Middle White pigs and Ryeland sheep in the Wye Valley, all skillfully butchered on site to bring us world-class meat direct from the farm.
Fish & Seafood
We get daily seafood deliveries from the markets of Devon and Cornwall. Hundreds of fishermen land dozens of species of fresh fish and seafood every day across these regional ports, bringing us the very best that the British coastline has to offer.
Our sharing boards are filled by masters of their crafts. We work with champions of British artisan cheese, Neal's Yard Dairy, and specialist butchery, Cobble Lane Cured, to present some of the finest cheese and charcuterie boards that the country has to offer.
